Risotto with chicken stock, saffron and parmesan.

Homemade sausages bound with truffle egg,

finished with lemon extra virgin olive oil

 

Penne con vitello  

Tubular pasta with a sauce of braised veal, thyme and parmesan.

Short tubular pasta with tomato, onions, peas and parmesan.

Sarda Marinata     

Fillet of lightly cooked bonito marinated in diced vegetables with wine

vinegar and extra virgin olive oil with  pinkeye potatoes.

 

Bucatini alla Matriciana

Classic Roman specialty of hollow spaghetti with cured pork cheek

and tomato. Served with pecorino.

Mafalda alla Tiberio   

Ribbon pasta with a Neapolitan pork and beef

ragout with ricotta and parmesan.
